This dough is extruded through our unique bronze dies to put all those sauce-capturing ridges on each thin, flat noodle. This delicate noodle is perfect with a ragu or a creamy sauce! Pappardelle originates from Giacomo's home region of Emilia-Romagna, but the Tuscans made this pasta the most famous. One-inch thick noodles with a rich and creamy taste are ready to twirl through sauces. In Tuscan, wild boar ragu is the traditional pairing, whereas in Emilia-Romagna, a thinner brother of this ragu, also known as Tagliatelle, is served with Bolognese.
